The Irish gave out a scholarship this year to a kid who's only skill is he's a great (supposedly) long snapper. They even have a Long Snapper camp nowdays, taught by a former UCLA long snapper Chris Rubio as part of a kicking camp. Here's an article on Long Snappers. Long Snappers
I don't understand the scuttlebutt over this. If the kid can nail every snap for 4 years on every punt, FG and extra point... you can't put a price on that.. even in the SEC
I think that somewhere along the way, college coaches have learned that they can't train a non-long snapping center to hike the ball as well as the kid who has become a specialist. I know of two different sons of acquaintances of mine who at different times over the past 15-20 years have walked on as long snappers at IU after specializing in same in HS. Both earned scholarships their junior or senior years. Neither was anywhere close to big enough to be recruited as an OL. One of them was not even 200 lbs. but he was the tough-as-nails son of a tough-as-nails dad.
